Cured properly and opened cold, Middlefork leads with myrcene: a heavy damp-earth note with something sweet and overripe sitting behind it. Underneath it caryophyllene adds a dry peppery floor, and it reads mid-palate rather than on the first pass. By about a quarter of an hour it has become a physical stillness — not sedation so much as a strong disinclination to get up. Two to three hours at a moderate dose. The caryophyllene underneath adds a warmth that keeps the whole thing anchored.

Fresh off the dry it leads with myrcene; after three or four weeks sealed in glass at 16-18°C the linalool underneath comes up and the whole thing gains a layer.
